Have an option in the statement page that have consolidated invoices show only the invoice number and amount. Our consolidated invoices have many matters and are difficult to read/a lot of pages. Currently every matter in the consolidated invoice are displayed as a matter under the invoice in the statement page.

Great idea! Statements of Account are very very hard to read. They only list the amounts due for individual matters! They don't list the invoice total! How can that be? Clients want to know what they owe per invoice, not the grand total, so they can match up invoices to amounts due.
Statements of Account should list the total for each invoice, and there should be an option to only list invoice totals.
