Add One Time Interest Fee (Instead of Calculated Simple or Compound Interest)

We would like to be able to charge our clients a one time interest fee on invoices over a certain number of days old. Currently, our only option is to add calculated interest and we have to spend a lot of time making sure the right invoices get the interest charge and override the calculated amount.
